Fiesta Corn Fritters!

Any time you make these fritters, you’ll create an instant fiesta. They’re full of flavor and texture and can be whipped up with many ingredients you already have hanging out in the pantry.  What really ties this dish together is the Fiesta Blend Shredded Cheese from Follow Your Heart. It has a great mix of tangy and spicy.

Fiesta Blend Corn Fritters

Yields 16-18 fritters

Ingredients:
1 cup organic finely ground yellow cornmeal

½ cup organic un-bleached all-purpose flour

1 teaspoon baking powder

½ teaspoon sea salt

½ dried parsley

½ cup organic corn kernels (1 cob corn)

1 tablespoon fresh chives, finely chopped, plus for garnish

¾ cup white onion, finely chopped

1 cup original un-sweetened almond milk

1 tablespoon lemon juice

½ cup Follow Your Heart Cheese Fiesta Blend Shreds

Neutral tasting high heat oil for cooking (safflower or grapeseed)

½ cup Barbecue or Chipotle Vegenaise Gourmet, or Barbecue Sauce

Directions:
In a mixing bowl, add cornmeal, flour, baking powder, sea salt, and parsley and whisk until uniform. Add corn, chives, onion, almond milk, and lemon juice to dry ingredients and whisk until smooth. Fold in Follow Your Heart Fiesta Blend Cheese Shreds.

Heat a small pot over medium-high heat and add about 2 inches oil. Heat until ripples appear. Carefully spoon 1 ½ tablespoons batter into oil and cook until golden, about 2-3 minutes, rotating batter to submerge in oil occasionally. Only place about 3 pieces in oil at a time, depending on size of pot. Repeat until all batter is used.

Remove each fritter from oil with a slotted spoon and place on paper towel lined plate.

Serve warm with Barbecue or Chipotle Vegenaise, or Barbecue sauce for dipping, and chives, if desired.
