On our way back from Palm Springs, we had to check out the world’s largest vegan grocery store – Viva la Vegan! It was full of everything from body care, to refrigerated and frozen treats, to crazy items that our eyes had never laid eyes on. They just opened a second location in Santa Monica, so if you don’t want to trek to Ranch Cucamonga – it could save you a trip. It was so fun looking around and picking out different goodies!
While browsing the aisles, it was tough to not just grab the vegan candy bars – but we made our way to some new and exciting products that were worth a try. We found vegan cheeses galore, and of course any fake meat product you can think of. We also saw items like vegan knishes (and they were pretty good). Whoa.
When we got back home we wanted to make a recipe using some vegan “shrimp” from the store. Because we didn’t have much around, since we were out of town before our trip, we put together a quick and satisfying “Shrimp” Scampi! The package of vegan shrimp says “Be Vegan, Make Peace.” Amazing!
Vegan “Shrimp” Scampi
1 package organic fettuccine pasta
2 tablespoons non-hydrogenated buttery spread (Earth Balance)
3 cloves garlic, finely chopped
1 package vegan “Shrimp” or “King Prawns”
1/3 cup vermouth, or other dry white wine
½ teaspoon sea salt
¼ teaspoon finely ground black pepper
¼ teaspoon red chili flakes
2 tablespoons fresh lemon juice, plus zest of ½ lemon
¼ cup fresh parsley, for garnish
Bring a pot of salted water to a boil and cook pasta according to directions. Strain and set aside.
Meanwhile, heat a sauté pan over medium heat and add buttery spread. Add garlic and cook about 20 seconds, or until fragrant. Add vegan shrimp and sauté for about 2 minutes, to brown slightly. If frozen, cook for 3-5 minutes. Add vermouth, sea salt, pepper, chili flakes, lemon juice and zest and cook about 3-5 more minutes.
When pasta is cooked and strained, toss together with vegan shrimp mixture and garnish with parsley. If desired, add additional sea salt and pepper and lemon juice. © Spork Foods 2013
